We all know the feeling of dread that gripped us as children when we heard our mother pull into the driveway and realized we hadn’t taken the pork chops out of the freezer as she had requested. That same sinking feeling probably hits you right now when you open the fridge on a busy weeknight and realize you didn’t take anything out to defrost last night. *sigh* Well, I’m glad I stocked my pantry with canned tuna for nights like this and had a delicious canned tuna recipe for dinner. (But you might want to take out the chicken thighs while you think about tomorrow night…)
